Zucchini Fritters

If you are always looking for things to turn your abundance of giant garden zucchinis into, then this recipe is for you.  These zucchini fritters were made vegan friendly, but if you’d prefer them cheesy then just add about half a cup of grated cheese to the recipe.  I decided to make some tzatziki sauce for dipping and it went really well together.  The fritters work well to freeze and take out as needed if that works better for you.  This recipe makes about 10-12 fritters depending on the size that you make them.

Recipe:

5 Cups of shredded zucchini

2 tsp sea salt (mix shredded zucchini and salt and let sit for 5 min, then squeeze the zucchini into a cloth or sieve until it is dry)

1 tsp pepper

1/4 tsp cayenne pepper

2 cloves of crushed garlic

2 eggs beaten

1/4 cup coconut flour

Optional 1/2 cup grated cheese

To cook, form into golf ball size balls and then press onto frying pan and cook on med to low heat (like a pancake).
