Looking for a healthy snack to take on the go? These homemade bars do the trick for me… that is if my kids don’t get to them first. Definitely kid approved and perfect for school lunches too.
Mix all ingredients together in the order listed…
1 Cup of Peanut Butter or Almond Butter
1 Tbsp melted Coconut Oil
1/4 Cup of Rice Syrup or Honey
1 tsp Vanilla extract
1/2 Cup crushed cashews or almonds
1/4 Cup Chocolate Chips (I used “Lilly’s stevia Chocolate Chips” from Vital Health)
1 Cup Rice Crisps (I used “One Degree Brown Rice Cocoa Crisps” from at Vital Health)
Spread Mixture about half an inch thick into a baking dish and let cool in the fridge for a least an hr before slicing into bars. Store in a secret location so that they won’t disappear within 20 minutes.
