If you’re looking for a healthy decadent treat this cake is your ticket. One might even go so far as to say you could make a meal out of it. The results look gourmet but this recipe is deceivingly quick and easy… or should I say “a piece of cake”!
Cake Ingredients:
2 Cups of cooked Quinoa
1/3 cup of Milk or Milk substitute
4 Eggs
1 tsp Vanilla extract
3/4 cup of Butter or Ghee or Coconut oil
1 and 1/2 Cups Cane sugar
1 Cup Cocoa powder
1/2 tsp Baking soda
1/2 tsp Sea salt
Cake Directions:
Preheat oven to 350 degrees. Put all ingredients into a blender and blend at a high speed for a couple minutes. Line bottom of 9X9″ pan with parchment paper. Pour blended ingredients into pan and bake for about 30 minutes. Test for moistness with a toothpick to be sure when its ready. Allow for cake to cool completely before icing.
Icing Ingredients:
2 Cups Whip Cream or Coconut Cream
1 Cup Chocolate Chips (Pssst…Vital Health has an amazing selection)
Icing Directions:
Heat cream until it gently simmers then pour over one cup of chocolate chips. Whisk to combine then cool in fridge for 2-3 hours. When fully chilled, use a mixer to whip into soft peaks then it’s all ready to spread on the cake. Garnish with fresh strawberries or whatever else you’re heart desires.
