Pumpkin Spice Coconut Muffins

Grain free and sugar free muffins that taste amazing!  Does that sound too good to be true?… it’s not, I promise.

RECIPE:

3 Tbsp melted coconut oil

3 eggs

1 tsp powdered stevia

1/4 tsp sea salt

1/4 tsp Nutmeg

1/4 tsp Ground Cloves

1 tsp vanilla extract

1/4 cup Coconut Flour

1/2 cup Pumpkin Purree

1/4 tsp Baking Powder

Just mix all of these ingredients together and pour into 6 muffin holders, then bake for about 15 minutes @ 400 degrees.

Also… You could ice these “muffins” and call them Pumpkin Spice Cupcakes.   I made a mixture of coconut cream and coconut oil with stevia, vanilla extract & sprinkled nutmeg for a healthy icing to match the nutrition of the “muffins”… and they were delicious!
