Kiwi Lime Pie

This is my new favorite dessert for sure.  Being that it is grain free and sugar free makes it guilt free also.  Nutritiously healthy fats in a deliciously beautiful package.  If you happen to be following a very restrictive diet such as the candida diet, then this recipe is a God send.  I’ve also make this recipe in tart size which works just as well.

Avocado Lime Filling RECIPE:

1/2 Cup coconut cream

2 tsp vanilla extract

1 1/2 tsp powdered stevia

1/8 tsp sea salt

3 Avocados mashed

3 Limes, zest & juice

1/4 cup of coconut oil melted

Basically just dump all of those ingredients into a food processor and mix.  When your pie shell is ready, pour the mixture into the shell and let set in the fridge for about an hour.  When ready to serve, slice some kiwi and garnish.

Coconut Flour Pie Crust RECIPE:

1/2 Cup Coconut Oil melted

2 eggs

1/8 tsp sea salt

3/4 Cup Coconut Flour

1/2 tsp Stevia Powder

Mix all ingredients together then press into a pie plate and make a few pricks in the bottom with a fork.  Bake for about 10 min at 400 degrees.  Let cool before pouring the filling into the shell.  This Crust is so versatile for anything you want to make.
