RECIPE:
Sauce Ingredients: 2 Tbsp Olive oil, 2 Tbsp Balsamic Vinegar, 2 Tsp Honey, 1/4 Cup Diced fresh basil, 1 tsp Oregano, 1/2 tsp thyme, 1/4 tsp chili flakes, sea salt and pepper to taste.
2 Cups Cooked Lentils
4 Ears of roasted Corn sliced off of the cob
2 Cups of mixed roasted vegetables – zucchini, peppers, carrots, cauliflower
1 Large Onion diced and caramelized in a skillet with a portion of the sauce.
1/2 Cup feta cheese
Toss all of the ingredients together in a bowl and serve sprinkled with toasted pumpkin seeds, or pack into small bowls and let cool in the fridge before tipping upside down and serving as a preformed patties.
