This Butternut Squash soup is the perfect thing to cozy up with on a cold wet day. Pair it with the most delicious coconut bread (Available at Vital Health) around for ultimate comfort food! Both the soup and the bread are gluten free, dairy free, and vegan friendly. Butternut squash is sweet enough that there isn’t even need for any kind of sugar in this recipe, which makes it great for people that need to avoid sugars.
1 Butternut Squash (baked)
1 Can coconut milk
3-4 Cups veggie broth (depending on the size of the squash & the desired thickness)
1 large clove of garlic
Curry Spices (1 tsp turmeric, 1 tst coriander, 1/2 tsp cumin, 1/4 tsp cayenne pepper, 1 tsp sea salt)
First saute the onion & garlic and bake the squash until it is soft. Next, put all ingredients in a blender (you might have to divide them in half & do two separate blends). Pour the blended ingredients into a pot and heat to desired serving temp. That’s it, super easy. Garnish with some broccoli for extra nutrition. ENJOY!
